The history of Lido Cocina Tsina (by Panciteria Lido) dates back to 1936, the year when a Chinese Chef simply called Mr. Lido, opened a modest eatery known as Panciteria Lido. The term panciteria was derived from a Spanish word that means restaurant. Also, its root word pancit, was said to have evolved from the Hokkien phrase pian sit or something that is quickly cooked. It was the era of vintage automobile trucks and first metered taxis. In Binondo, however, horse-drawn-carriages called calesas dominate its narrow roads as primary mode of transportation. During that time, Chef Lido was busy concocting a recipe that would later become his restaurant’s house specialty. Chef Lido transformed the humble asado into something extraordinary by curing the choicest pork loin and roasting it in a brick oven with just the right amount of heat from the firewood. This method effectively locked in the aromatic flavors so that every bite of its succulent meat is a cacophony of wonderful tastes in the mouth. Lido Cocina Tsina (by Panciteria Lido) has certainly perfected the top-selling and unique Chinese Pugon-Roasted Asado.
